Job Description

The Dinex Group is seeking a dedicated and motivated Pastry Cook to join our Épicerie Boulud Commissary Prep Kitchen in Downtown Manhattan.

The Pastry Cook will be responsible for supporting small-batch bakery production and assisting the viennoiserie team with daily preparation and production needs. The ideal candidate has hands-on baking or pastry experience, strong attention to detail, and the ability to work efficiently in a professional production kitchen while maintaining consistent quality standards.

Essential Duties:

• Assist with small-batch production of bakery items according to established recipes and production schedules.
• Support the viennoiserie team with daily preparation and production needs.
• Prepare and organize daily mise en place to support efficient production.
• Measure, mix, and prepare ingredients according to established recipes and specifications.
• Assist with dough preparation, shaping, and other bakery production tasks as needed.
• Maintain consistent quality, texture, flavor, and appearance across all products.
• Follow production schedules and meet daily deadlines in a fast-paced kitchen environment.
• Properly label, date, store, and rotate ingredients and finished products according to company standards.
• Maintain a clean, organized, and sanitary workstation.
• Minimize waste and handle ingredients and finished products according to company procedures.
• Communicate effectively with the pastry and bakery teams to support smooth daily operations.
• Follow all food safety, sanitation, and workplace safety procedures.

Qualifications:

• At least 2 years of professional baking or pastry production experience.
• Working knowledge of baking ingredients, techniques, and production methods.
• Ability to follow standardized recipes and production specifications accurately.
• Strong attention to detail and willingness to learn and support the viennoiserie team.
• Reliable, organized, and team-oriented with a positive attitude.
• Culinary or pastry training is preferred but not required.
• Must be available to work weekdays, Monday through Friday.
• Must be able to accommodate a schedule requiring either a 4:00 AM start or availability until 6:00 PM.
